Hi, I'm Macy Fisher the Mifflin County Dairy Princess.
This week has been pretty slow actually. I haven't had any promotions this week, however, I did have one big event this week. Today is the day that our fruit order is delivered to the school. For many years now our FFA chapter's main fundraiser is our citrus sale. Even though this year was one of the smallest orders we have had in a few years, 400 boxes of fruit is still a lot to hand sort! I can't complain though. Fruit Day is one of my favorite FFA activities of the year.
Dancing at the Farm Show is another one of my favorite FFA activities. I love going to the Farm Show! One of the best things about the Farm Show is the food! Every year that I am there I have to have a milkshake and cheese cubes. Both of them are part of the State Dairy Promotion booth. They are the best milkshakes I have ever tasted!
A lot of people got to the Farm Show to walk around and look at everything, but I go for the food! Whoever thought that you could get two of the three servings of dairy that you need daily in one meal at the Farm Show?
This year at the Farm Show I will also be receive my Keystone degree. The Keystone is the highest degree that you can receive in the state of Pennsylvania and I will get mine this year.
This week I thought that the recipes should be ones that everyone could use at their next Christmas party or any party.
Hot Layered Buffalo Spread
1 package (8-oz.) cream cheese, softened
1 cup chopped cooked chicken
1 tablespoon hot pepper sauce
1/2 cup crumbled blue cheese
2 tablespoons red bell peppers, chopped
Ritz crackers and celery sticks
Spread cream cheese onto microwavable plate or bottom of 9-inch pie plate. Toss chicken with hot sauce; spoon over cream cheese. Top with blue cheese and peppers. Microwave on high for 1 1/2 to 2 minutes or until heated through. Serve with crackers and celery.
Ritz Cheesy Crab Topper
4 ounces Cream Cheese, softened
1/4 cup sour cream
1 can crabmeat, drained, flaked
1/4 cup chopped fresh parsley
1 tablespoon grated parmesan cheese
3 drops hot pepper sauce
48 Ritz crackers
Mix ingredients except crackers; cover. Refrigerate at least 1 hour. Spoon about 1 teaspoon of the crabmeat mixture onto each cracker just before serving.
Cheesy Spinach and Bacon Dip
1 package (10-oz.) frozen chopped spinach, thawed, drained
1 pound Velveeta cut into 1/2-inch cubes
4 ounces cream cheese cut up
1 can diced tomatoes and green chilies, not drained
8 slices bacon, crisply cooked, drained and crumbled
Combine ingredients in microwavable bowl. Microwave on high for 5 minutes or until Velveeta is completely melted and mixture is well blended, stirring after 3 minutes.
Serve warm.
