It’s hard to go wrong with bananas and chocolate

Hi, I'm Macy Fisher, the Mifflin County Dairy Princess.

I have to be honest my life has been a bit boring lately. All I have been doing is going to school, going to the barn, and sleeping. Then I start all over again the next day. I don't have any promotions coming up.

I think things have slowed down a little since school has started. Last year, Rebecca could go to many of her promotions because she had already graduated from high school. I am able to do my promotions, I'll make sure of it, but it will be a little bit more challenging since I am in school. I will just have to plan around tests and projects, that's all.

One project that I have to do as a Mount Union student is a Graduation Project. We have to do a project that benefits the community in some way, whether it be by raising money for a group or to have an activity for the public or schools. I'm not sure what I'm going to for my project yet, but I'll think of something.

I also have to complete 10 hours of community service, but I think the church will help me out there. Our church is going to have a bake sale this month and I'm not quite sure what I'm going to make yet. My sister and I do most of the baking in our house. Mom will sometimes bake a cake or something like that, but for the most part we do it.

The recipes this week are ones that I have used at bake sales that are still packed with nine essential nutrients. I really like both of these because one uses chocolate and the other uses bananas, both of which I love.

I can eat large amounts of banana bread. I really can't get enough of the stuff and what girl doesn't like chocolate? That is of course if you aren't allergic to chocolate.

I can guarantee that these will be great recipes for bake sales or for in your kids' lunch boxes, that is if kids still use lunch boxes. I know that they used to be the coolest thing when I was younger.

Everyone wanted to pack their lunch to show off their lunch boxes but I'm not sure what kids do now. It might not be cool to carry a lunch box anymore but I do know that they will have cool moms. They have moms who will pack them sweets in their lunches but you will know that it really is healthy for them. Don't worry it will be our little secret!

Frosted Banana Bars

1/2 cup butter, softened

1 1/2 cups sugar

2 eggs

1 cup (8 ounces) sour cream

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

2 medium ripe bananas, mashed (about 1 cup)

Frosting

1 package (8 ounces) cream cheese, softened

1/2 cup butter , softened

2 teaspoons vanilla extract

3 3/4 to 4 cups confectioners' sugar

In a bowl, cream butter and sugar. Add the eggs, sour cream and vanilla. Combine the flour, baking soda and salt. Gradually add to the creamed mixture. Stir in bananas. Spread into a greased 15-inch-by10-inch baking pan. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool. For frosting, in a bowl, beat the cream cheese, butter and vanilla. Gradually beat in enough confectioners sugar to achieve desired consistency. Frost bars. Store in the refrigerator. Yield: 3-4 dozen.

Sour Cream Chocolate Cookies

1/2 cup butter, softened

3/4 cup sugar

1/2 cup packed brown sugar

1 egg

1/2 cup sour cream

1 teaspoon vanilla extract

1 3/4 cups all-purpose four

1/2 cup baking cocoa

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup (6 ounce) semisweet chocolate chips

1/2 cup vanilla or white chips

In a large bowl, cream butter and sugars until light and fluffy. Beat in egg, sour cream and vanilla. Combine dry ingredients. Gradually add to the creamed mixture. Stir in chips. Drop by rounded tablespoons 2 inches apart onto greased baking sheets. Bake at 350 degrees for 12-15 minutes or until set. Cool for 2 minutes before removing to wire racks to cool completely. Yield: about 3 dozen.
